Corn Roasted Salsa

1 (16-ounce) bag frozen corn
2 large tomatoes, diced
1 small red onion, chopped
1 (15 ounce) can black beans, drained and rinsed
3 green onions, chopped
1 clove garlic, minced
2 avocados, diced
juice of 3 limes
1/2 cup chopped cilantro
1/4 cup olive oil
salt and pepper to taste

Spread corn in single layer on a cookie sheet. Allow corn to thaw, then place sheet under broiler and broil kernels until they begin to brown. Cool, and place in mixing bowl with remaining ingredients. Allow mixture to sit several hours or overnight for flavors to "marry." Serve with tortilla chips.

Best Ever White Chicken Chili

You will never need another white chicken chili recipe! This is the best!

3 16 oz cans Great Northern Beans
2-3 cups chopped cooked chicken
1 T olive oil
1 medium onion diced
1-2 cloves garlic, minced
1 4 ounce can chopped green chilies
1 t cumin
3/4 t oregano
2 cans chicken broth
1 cup jack cheese
8 oz sour cream

Heat oil over medium heat. Add onions and saute. Stir in garlic, chilies, cumin, and oregano. Saute 2 min. Add broth, beans (not drained) and chicken. Simmer for 30 min. Add cheese and sour cream. Stir until melted. Simmer 5-10 min. Serve with extra cheese.

Yellowstone Salad

1/3 cup white vinegar
1/4 cup oil
1/2 cup sugar
1/4 t. salt
3/4 t. onion powder
1/3 t. dry mustard
1-2 t. balsalmic vinegar

1 head romaine
1 bunch spinich
1 cup feta cheese or grated parmesan cheese
1 small red onion diced
medium gala or fuji apple diced
1/2 lb bacon crumbled
1/2 cup mushrooms

Chicken Tacos


You will need:
Chicken Breasts
Corn Tortillas (don't use flour not as good)

Marinade :
1 cup fresh lime juice
1 cup white vinegar
1 cup corn oil
1 cup soy sauce
1 T. salt
1 T. pepper
2 tsp. Garlic powder
½ cup – ¾ cup sesame seeds
Reserve ¼ of the sauce separately in a bowl. Marinade chicken in remaining sauce for 1 – 3 hours. Grill the chicken and cut into thin strips. Dip flour tortillas in the reserved ¼ sauce, and grill on BBQ, turning frequently. Serve immediately. Make the tacos with the grilled chicken and serve with any of the following:Cheese Guacamole Limes Tomatoes Green Onions Corn Cilantro Sour cream Shredded lettuce Salsa Anything else you want!

Peanut Butter Fingers

My friends ask me to bring this to every party!

Bake 375 for 10-15 min

Cream Together : ¾ cup butter
¾ cup sugar
¾ cup brown sugar
¾ cup peanut butter
2 eggs
2 tsp. vanilla

Add: 1 ½ cup flour
1 ½ cup rolled oats
½ tsp. salt
¾ tsp. baking soda

Pat into jelly roll cookie sheet. Bake. Cool. Frost with 1 can Chocolate Frosting

Tortellini Chicken and Artichoke Salad

I remember a few of you enjoying this in Vail

9 oz cheese tortellini
3 cups cubed cooked chicken
½ cucumber, sliced
¼ cup chopped red onion
1 medium tomato, chopped
1 14oz can artichoke hearts, drained, chopped
1 8oz bottle Cesar salad dressing
